Strawberry Bisque (AKA: Chill Strawberry Soup)


It is hot outside… you are not in a mood for warm food… So, how about a fruit soup… Yham yham… J

Strawberry Bisque (AKA: Chill Strawberry Soup)

You will need:
  • 300g strawberries
  • 400ml sour cream
  • 350ml skim milk
  • 1 bottle of Ginger Ale (25cl)
  • 60g sugar
  • 2 tbsp Cointreau (Orange Liquor)
  • Juice from 1 lemon
  • Mint leafs for garnish
  • Some strawberries for garnish

How to do:
1) In a blender transform the strawberries into purée;
2) Add the remaining ingredients and mix them;
3) Serve three small ladles per soup dish, garnishing with one strawberry and a mint leaf.

Spicy Chicken w/ Coconut Curry


Today we bring you some fresh Thailand flavors…

Spicy Chicken w/ Coconut Curry

You will need:
  • 400ml coconut milk
  • 2tbsp powder curry
  • 1tbs garlic pasta
  • 500g chicken brest chop in pieces
  • 1 lime (zest and juice)
  • 2 tbsp English sauce
  • ¼ tsp Tabasco
  • ½ tsp saffron
  • ½ tsp salt
  • Basil
  • Coriander

How to do:
1) Pour the coconut milk into a saucepan and bring to a boil;
2) Lower the heat and let it boil for 10 minutes (allow it to thicken);
 3) Add the powder curry and the garlic pasta, boil for 5 minutes;
4) Place the chicken pieces in the saucepan, raise the heat and allow it to boil again, stirring all the time;
5) Lower the heat and add the lime zest, lime juice, English sauce, Tabasco, saffron and salt;
6) Place the lid in the saucepan and allow it to cook for +/- 20 minutes, checking the sauce occasionally, if the looks dry add some more water;
7) Add basil and coriander for garnish and flavor, season with salt and pepper;
8) Serve with white rice.

Spanish Rolls


Today’s recipe is an adaptation of a 1979 classic from Mary Berry… Put your hand together to Spanish Rolls. 

Viel with mushrooms and onion

You will need:
  • 100g (0,22lb) butter;
  • 1 Onion;
  • 100g (0,22lb) mushrooms;
  • 50g (0,11lb) breadcrumbs;
  • 1 beated egg;
  • Salt and Pepper;
  • 4 veal scaloppini, thin and beaten;
  • 40g (0,08lb) flour;
  • 150ml (5oz) chicken broth
  • 1 lime;
  • 1 tbs bourbon;
  • 150ml cream.

How to do:
1) Melt half of the butter in a saucepan, chop de onion and the mushrooms into tiny pieces. Fry the onion until it cooks, do not burn it, and add the mushrooms, let them into a simmer for 2 minutes;
2) Put the bread and the egg into the saucepan, season it;
3) Split the mixture by the scaloppini, and wrap with the help of toothpicks or twine;
4) Melt the rest of the butter in a skillet and fry the wraps/rolls. Remove them when cooked and reserve in a warm place;
5) Add flour to the remaining fat in the skillet and pour slowly the broth, stir all the time;
6) Cut some lime zest to garnish, and pour into the sauce juice from one lime and the bourbon. Bring it to a boil, stir all the time;
7) Remove it from the heat and join the cream.
8) Serve the wraps with the cream and white rice.

Grapes Mojito

Today we bring to you one of our favorite cocktails, Mojito, but slightly different from the usual, we had it some grapes... First time we have it? 2009 in Miami, Courtyard Marriott Italian restaurant.

Ingredients:
  • 50ml (1,70oz) Anejo Rhum;
  • 1tbs brown sugar;
  • 1/2 lime;
  • Drop of mint syrup;
  • Mint Leafs;
  • 5 grapes;
  • Sparkling water.

How to do:
1) In tall large glass pour the sugar, 1/2 lime juice, some mint leafs and 3 small grapes. Macerate this ingredients;
2) Pour the syrup and the Rhum and give it a slight stir;
3) Place some ice cubes and garnish with mint leafs and grapes;
4) Fill the rest of the glass with sparkling water.

Black Russian

Today I bring you something different, an amazing cocktail which I fall in love in the Atlantic City casinos. The black russian.


You will need:

  • 45ml (1,5oz) Vodka
  • 40ml (1,30) Kahlúa 
How to do:
Mix all the ingredients in a short old fashion glass fill with ice cubes. 


Use Kahlúa not any other coffee liquor, just the Mexican vanilla tasty one.
