Today’s recipe is an adaptation of a 1979 classic from
Mary Berry… Put your hand together to Spanish Rolls.
You will need:
- 100g (0,22lb) butter;
- 1 Onion;
- 100g (0,22lb) mushrooms;
- 50g (0,11lb) breadcrumbs;
- 1 beated egg;
- Salt and Pepper;
- 4 veal scaloppini, thin and beaten;
- 40g (0,08lb) flour;
- 150ml (5oz) chicken broth
- 1 lime;
- 1 tbs bourbon;
- 150ml cream.
How to do:
1) Melt half of the butter in a saucepan, chop de onion and the mushrooms
into tiny pieces. Fry the onion until it cooks, do not burn it, and add the mushrooms,
let them into a simmer for 2 minutes;
2) Put the bread and the egg into the saucepan, season it;
3) Split the mixture by the scaloppini, and wrap with the
help of toothpicks or twine;
4) Melt the rest of the butter in a skillet and fry the
wraps/rolls. Remove them when cooked and reserve in a warm place;
5) Add flour to the remaining fat in the skillet and
pour slowly the broth, stir all the time;
6) Cut some lime zest to garnish, and pour into the
sauce juice from one lime and the bourbon. Bring it to a boil, stir all the
time;
7) Remove it from the heat and join the cream.
8) Serve the wraps with the cream and white rice.
